Corporate Executive Baker  (Full Time)
Location: Not Store Specific

As the Companys Executive Baker you are responsible for supervising and organizing all food production at the Store's commissary bakery. In this capacity you will be responsible for all aspects of quality control, new product development, and food handling safety. In addition you will be expected to manage the commissary bakery staff in a manner that maximizes productivity in keeping with the Companys expectations of good employment practices. You will be expected to meet timelines regarding the production of food for the Companys other stores, and ensure that those products are packaged properly. You will be expected to create and produce products for sale that meet the Companys food cost targets. You are responsible for all communication and administration necessary for the successful completion of your duties and for ensuring compliance with all Federal, State and local laws. You will report to the Windsor Bakery Tavern Manager, Corporate Bakery Coordinator and Store Director and coordinate your functions with him/her to maximize quality and productivity. Your job duties will also include any additional responsibilities deemed appropriate by the General Manager.

Essential Duties and Responsibilities:

Ability to effectively lead from the Companys Mission Statement

Attend in-store manager meetings

Oversee customers service standards are aligned with company goals

Responsible for attainment of budgeted financial targets for the Production Bakery

Develop and implement new recipes for the bakery departments

Create a product mix that aligns with company quality standards

Maintain the integrity and quality of all in-house recipes

Accurate production planning and forecasting for special events and holidays

Responsible for inventory procurement, management of inventory and proper rotation

Aid in processing and receiving warehouse orders

Prepare all mixes for production

Oversee the careful baking of quality product

Produce product in a timely manner and manage overall product fill timelines for bakery departments across all Company retail locations

Properly label and date all product

Oversee product transfers and complete accurate paperwork

Control waste and spoilage

Maintain a safe and sanitary production department

Create and maintain content of informational signage, communicate with Graphics and Marketing and direct the use of signage to promote products

Attend and participate in all bakery department inventories

Manage all price changes and UPC changes relevant to the ad program and in-store specials to ensure accuracy in POS system; coordinate with POS

Responsible for management, training, mentoring and development of the Bakery Production staff

In collaboration with the Bakery Tavern Manager, responsible for Production staff schedules, 1000 Hour Reviews, attendance and policy violation documentation

You are expected to conduct your affairs with integrity and in accordance with all policies outlined in the companys handbook

You are responsible for all communication and administration necessary for the successful completion of your duties

Must work four of the six holiday outlined in the Employee Handbook

Must work the day before Thanksgiving and Christmas Eve

Ensure compliance of all Health and Safety standards

Ensure compliance with all Federal, State and local laws

Your job duties will also include any additional duties deemed appropriate by the Store Director, Bakery Tavern Manager and Bakery Coordinator

EXPERIENCE

Minimum of 2 years of experience in all aspects of bakery production

Minimum of 2 years of successful bakery department management in retail grocery or commercial bakery environment; merchandising, buying, and effective pricing to ensure profitability

Minimum of 2 years of successful staff management and education development

Previous experience and enforcement of applicable State of California Health and Safety Codes for safe food handling, Weights and Measures compliance

SKILLS

Excellent knowledge of proper equipment usage and training

Excellent knife handling skills

Strong passion for baking fantastic and delicious pastries and breads

Excellent knowledge of safety and sanitation

Must have excellent interpersonal skills, well organized and detailed oriented

Must have excellent customer service skills

Must have excellent communication skills; written and oral

Must have strong work ethic and organizational skills

Must be dependable and flexible to meet the needs of the department and work variable shift, including weekends and holidays

Must have the ability to lead and train a diverse workforce

Excellent time management skills

Financial acumen and ability to read and interpret financial statements

Proficient with Microsoft Word, Excel, Outlook and programs associated with this position

Knowledge of Ceridian Dayforce and schedule writing

Ability to make decisions quickly and effectively

A working knowledge of a retail store day-to-day operations

Ability to work well with others and as part of a team

Ability to perform all physical requirements of position
